What is your favorite soup recipe? Now that it is October, I'm thinking about making soup. I tried this recipe tonight for my son's birthday. It came out rather tasty. I had never cooked with shallots or fresh ginger before. Carrot Ginger Soup 3 tablespoons Butter 3 Shallots, whites only, chopped 1 medium Onion, chopped 3 cloves Garlic, crushed 3 tablespoons fresh Ginger, crushed 2 pounds Carrots, sliced 1-½ tablespoons fresh Thyme fresh ground Pepper, to taste 4 cups low sodium Chicken or Vegetable Broth ¼ cup fresh Parsley 1 pint Heavy Cream Salt, to taste Melt the butter over medium heat in a soup pot. Add shallots, onion, garlic and ginger. Saute for 5-10 minutes until onions soften and smell filters into home. Add carrots, thyme, fresh pepper to taste, and broth. Cover and bring to a boil. Reduce heat and remove lid slightly. Cook until the carrots are soft. Once carrots are soft, remove from heat, add parsley. Using a handheld blender, puree the soup. Add cream and stir.
