They have lines attached to their flight suits, which lead to retractors. As they fire the ejection seat, those lines retract, pulling their arms and legs in tight, so they don't hang out in the air stream to get pulled out of joint. They also have a stabilizing drogue to slow them down and prevent tumbling. And even with stuff like that, high speed ejections still result in a lot of injuries, sometimes ending careers, if not lives.
