Viking, I agree that you need serious help, but I'll answer the question anyway.
I take a bottle of white wine vinegar, then make my own flavored vinegar. I pour some into a cup, stuff in lots of fresh herbs, ginger, jalapeno slices, dried herbs, etc. I refill from the cup until the bottle is full again. Then I shake it up, let it sit for about 6 months, and it is ready to use, either by itself or with a little bit of olive oil.

And I really don't care if that sounds Martha Stewart-ish, because:

1. Unlike Viking, I don't need salad dressing pickup lines.
2. My stuff tastes better.
3. Umm.... screw you all, anyway, I don't need no stinkin' reasons!
