  1. Christmas dinner with a friend of mine. She didn't like that my brine was so salty, so she tried one with a lower salt concentration and a longer soak. It was a bit dryer than mine, but still well within the definition of good turkey. I made some roast garlic mashed potatoes, she made some dressing and cranberry sauce. Between the two of us, we seem to have the roast turkey dinner sorted. We're planning to try sushi and roast beef (At different times, though there might be some seared beef sushi,) in the near future. I'm trying to teach myself how to set things on fire with my mind.   4. Eloy over Christmas/New Year. Everyone's going to be there*. Warm and sunny during the day, more planes than you can shake a stick at. You'll need to do a currency jump with an instructor, but otherwise you should be able to pick right back up where you left off. I started in July of 2012 at the age of 42. You definitely shouldn't let the age gap bother you. It really doesn't take long before you start to notice the newbies looking at you with wide eyes, afraid to talk to you because you're such a badass.   5. I seem to recall a discussion that we initially thought they didn't do that much and occasionally got infected, so we'd take 'em out at the drop of a hat. Later on we realized that they're actually useful for something (I forget what,) and stopped taking them out so often. Now they only take them out if they have severe enough problems to warrant it.   7. Even paying attention to the slider, I still get a hard one from time to time. I've had a couple of openings on a couple of different canopies that were so hard they made me see stars. Maybe check the cells to make sure there's no internal tearing in addition to the other checks you're doing. Maybe get yourself checked for whiplash if you're still feeling it a few days later. I suspect we get whiplash more than we realize, just most of us don't bother to get checked after something like that. I'm trying to teach myself how to set things on fire with my mind.   9. Alton Brown pretty much taught me how to cook. Back around the turn of the millenium he did an episode on how to cook a turkey. I've made two or three a year every year since then, using his recipe. Basically brine it and cook it using a probe thermometer and you can't go wrong. It makes a delicious bird every time, and really isn't that much work. I'm pretty sure you can find a video and his recipe on food network's web site somewhere.   10. Nope. I bought a sampler pack from Riehle Farms in Indiana that ended up being something like 13 pounds of popcorn kernels. I pop it in a big thin wok I got a few years ago that turned out to be crap for stir frying. It's pretty good for popping popcorn, though. I just add a few teaspoons of canola oil and my kernels and then cover it with a lid from another pot I have handy. Once the popping mostly dies down I remove the lid and swirl the popcorn around a bit, which seems to do a pretty good job of popping most of the rest of the unpopped kernels. If I'm melting butter, I can just add a few teaspoons of butter to the wok once I remove the popcorn and the residual heat will melt the butter. The Riehle farm popcorn doesn't necessarily taste much better than grocery store kernels, but their hulless variants don't seem to have any hull to get stuck in your teeth and throat. Sometimes I'm in the mood for that, sometimes not. I found the same kernels on Amazon for over twice the price the farm was asking for the same ones, and that was before shipping got added in. With shipping, the price directly from the farm was still less than the asking price on Amazon before shipping. I'm trying to teach myself how to set things on fire with my mind.   12. Seeing one from the air makes you think that too. I had one last Saturday and cut away at 2500 feet. The witnesses in the air thought I was much lower. The guys I was jumping with on my first one also thought I was much lower than I was -- that one was well over 2 grand, too. 750 doesn't seem like it gives you a lot of getting-your-shit-together time, but maybe they assume you're out to lunch and won't be getting your shit together anyway.   13. I've been on a popcorn groove lately. I often rediscover that something's good and then go overboard on it. Can't wait until tequila rolls back around. Anywhoo, I popped some popcorn up tonight with home made curry powder (red pepper flake, coriander, cumin, onion powder, cloves, nutmeg and cinnamon.) Kind of tastes like burning (too much red pepper flake) but it really works well and the whole house smells awesome! I'm trying to teach myself how to set things on fire with my mind.   15. Personally I like to stay up longer, and I like having some extra range in the event that I put myself farther out than I planned on my wingsuit. I'm jumping a Safire 230 right now, and am neighborhood of 250 exit weight. I don't foresee a time when I might want to downsize again. Whenever the current Safire 230 is no longer fit to jump, I could easily see buying another Safire 230 and jumping that one until it's no longer flyable too.   16. Just find some other guys who fall like you to jump with. Your range will improve a bit with experience. Tunnel flying really helps, too. The IR thermometer said my cast iron frying pan was at 400 degrees when I thought it was ready, and my steak was a perfect medium rare. Recovering from a day of skydiving and a foodgasm right now.   19. I mostly use Alton's recipe: http://www.foodnetwork.com/recipes/alton-brown/pan-seared-rib-eye-recipe.html but the searing part takes a bit of practice. Seems like there's a pretty fine line between searing and "Holy shit that's a lot of smoke!" This recipe also always makes a lot of smoke, so be sure you have adequate ventilation. It seems like the pan is ready when a drop of water skitters off it. A friend just gave me an IR thermometer, so I'll take a reading next time I make one. Which may be tomorrow. I also feel like the oil is optional, although I usually get better results when I use it. He also has an alternate method which seems marginally... insane... to me. But I hear it works well for many types of steaks, so I might have to try it sometime. I'm trying to teach myself how to set things on fire with my mind. Hey... is it hot in here?

  22. Ooh. I've been thinking I should make a steak lately. It's been months. Time to bust out the cast iron frying pan! This is pretty much how I do it, except I use kosher salt.   23. Canopy course, yep. The guys working on their accuracy will usually put a target (often a frisbee or traffic cone) out in the field and then do a bunch of hop and pops to try to land on it.   24. Well if it does have rabies it's going to die, but there's not really any reliable way to tell other than just watch them for about a month to see if they die. If it has rabies and you get bitten, well I hear the rabies shots these days aren't nearly as bad as they used to be, but it's still a bother. Interestingly enough you can get vaccinated in advance, if you work with animals a lot. I'd either let it go or contact animal control and see what they want you to do with it.
