It's pretty mild the way it is written, so I spiced it up the second time by adding a green pepper, parsley, thyme, paprika, salt and pepper. The original meal Paella comes from Valencia (Spain) an it is a fish an rice dish over the years the Paella has adapted to the needs of the people. Ergo. So now we have vegetable Paella an a meat Paella. Every holidays I make (with help from the guys) a fish Paella for around 25 people (a fish Paella also contains meat). Here in Spain we don' use Saffron rice or Saffron to colour it. It's best made with round rice as this soaks up the liquid stock (as opposed to long grain) The hardest part of a good Paella is That you need to burn the bottom whilst leaving the rest moist.
