Sweet pototoes are very very tough to cut.... they resist,,, just so long... and then BANG!! they let the knife Fly... squash... butternut, acorn, etc,, are that way too.. and the bad thing is.... While struggling,, we just KNOW that the damn knife is gonna slip.....and STILL can't manage to prevent it.... best to Microwave them FIRST for about 3 or 4 minutes,, and THEN have at 'em...
