Let the water sit for one minute after heating to boil, pour over ground beans and time for one more minute, less oil extraction. Only 1 to 1 1/2 cups each morning. Flavor is better than drip or any other type of brewing. Instant coffee? Never, why bother. If this is coffee, bring me tea. Having spent a good deal of time in most of the Central and South American coffee producing countries I've had the chance to drink a cup or two and learn few things on the way. They say that once you drink directly from the fountain, nothing ever tastes as good ever again. I think there is a good deal of truth to that when it comes to coffee. Unless one has spent a good deal of time in a coffee producing country and has tried the all the different possible variations, one doesn't really know what good coffee is, especially if your palette has only been exposed to what you can get at the super market or corner Starbucks in the USA. As an example,take those who say they like Colombian(or any specific country's bean). To me, that is a broad generalized statement, much like saying that they like wine. Colombia has 3 distinct regions where coffee is produced and as such, each has a distinctly different flavor or acidity due to factors such as type of soil, et cetra. The Colombians are aware of this and divide coffee beans according to where they are grown and have different names for them.Once one has had coffee from these different regions it becomes apparent that not all coffees are created equal or are appealing due to peoples differing tastes. All coffee producing countries have an "exportation grade" coffee that they sell to the rest of the world. One would think that the exportation grade coffee would be the best. Thats not necessarily true if you have a taste preference that happens to be different from the exportation grade. The coffee that is labeled Colombian here in the USA is actually one of the coffee beans that is the least acidic of the coffees produced in Colombia and as such has a mellow or weak taste compared to the other 2 types produced. Having had all 3 types, I prefer the slightly stronger bean than what is exported. If you walked up and ordered a cup of the average black coffee sold at the Juan Valdez coffee shops in Colombia it would not taste like the same Juan Valdez you get at your supermarket by any stretch. The same can also be said for coffee from Costa Rica and most other places coffee is produced. So if you think that you like one specific type of coffee be aware that there are actually more flavors out there than most are aware of.If you ever travel to a coffee producing country, make sure you talk to the locals and ask about and try the different flavor beans that are out there, you just might be pleasantly surprised by what you taste and later appalled by what you previously considered a good cup of coffee.
