Snowbird 0 #9 February 19, 2004 Definately finger lickin good, and simple. Start it early, not too much last minute prep. Chicken Cacciatore for 4 Pan fry enough chicken pieces for your guests. Season with salt, pepper, and garlic. Chop up: 1 medium onion, slivered. 1 large red and/or yellow pepper (more if you like) 12 white mushrooms sundried tomatoes, about 6 or 8 slices When the chicken is browned, add all the onion, sundried tomato, and about half the peppers and mushrooms. Add: 1/2 cup good wine 3 cups plain tomato sauce 2 cups tomatoes, either canned or fresh doesn't matter 1 tsp oregano 1 tsp basil black pepper to taste 1 bay leaf cayenne pepper to taste, if you want it hot Let it cook, for a couple hours or until nearly ready to serve. Then toss in the rest of the veggies. Serve over noodles of your choice, with parmesian cheese and garlic toast. The cape Malay slaves brought it to our country and today it's one of our traditional dishes. 2 onions chopped finely oil or butter for frying 2 lb minced meat 1 slice of bread 1 c of milk 2 eggs 3 t curry powder 5 t sugar 2 t salt ½ t pepper 2 t turmeric juice of 1 lemon ½ c of raisins 4 lemon or bay leaves ½ c chutney Heat the oven to 350 F Brown the onion and meat in oil till just cooked and brown. Soak the bread in the milk, then press out the excess milk. Ground the bread finely into the meat mix Mix all other ingredients, except ½ c milk, 1 egg, and leaves. Put the mixture in a greased oven dish, roll up the leaves and stick them upright into the mixture. Bake for 45 minutes Beat the left over egg and milk together and pour over the meat half an hour before the dish is cooked. Serve with rice and a green salad. Tink1717 2 #13 February 19, 2004 Grilled Chicken Breast Sandwich: 2 Boneless, skinless breast sections 1/2 cup olive oil (Extra Virgin is best) 4 tbsp Old Bay seasoning 1 tsp Black pepper 1 tsp Oregano powder 1 tsp White pepper 2 Steak rolls Ranch dressing Place spices and oil in a bowl and mix thoroughly. Place breast sections in a ziplock bag and cover with spice mixture. Sit for 45 mins at room temp OR overnight in the fridge. Remove from bag and grill over med high heat until juices run clear (abt 3 mins per side). Top with ranch dressing , lettuce or whatever veggies you like on toasted steak roll. If you like chutney, here's a great recipe, and saves TONS of money (it's pretty expensive here in the States). You can substitute just about any dried fruit ... Very good on kebabs, chops (esp lamb) and rice. Blatjang (Apricot Chutney) 500 g. (1lb) Dried apricots 30 g. (1 oz) pounded and sifted chillies 1 dessertspoon cayenne pepper 3-4 large onions 1 Tbsp salt 1 Bottle vinegar (500 ml) 500 g (1 lb) Stoned raisins or sultanas 60 g. (2 oz) Ground almonds 1 Clove garlic minced 2 Tsp ground ginger Sugar to taste Soak the apricots overnight and boil until soft. Mince the raisins and parboil the onions. Add all the other ingredients and boil slowly for 1/2 hour, stirring occasionally, so that the mixture does not catch. The consistency of the mixture must be that of smooth paste that will not flow when tested on a plate. Dont forget to season the beef w/ salt, pepper and onion powder. Arrange your peppers in a pan and pour condenced tomato soup all over it. Put a pad of butter here and there and then bake, covered, at 400 for about an hour. very easy to make and very tasty to eat! peacefuljeffrey 0 #20 February 20, 2004 Chicken Quesadillas Boneless skinless chicken breasts Onion Green pepper Mushrooms Cheddar cheese Flour tortillas Lettuce Tomato Sour cream jarred Jalapeno slices Thoroughly cook boneless skinless chicken breasts in a George Foreman grill (or lacking that, fry them in light oil) Cube up the chicken breast Cut the mushrooms, onions and peppers into fine cubes, sautee until cooked through and sort of soft Mix the chicken and veggies together and make sure they're all good and hot Lightly oil the pan, place a tortilla on it, and scoop chicken/veggie mixture onto it, creating a layer. Shred cheddar cheese to coat the mixture, and cover with a second tortilla. Get the bottom tortilla browned, and then flip (I use a plate to cover the quesadilla, hold the plate and lift the pan and flop the quesadilla, then slide it back onto the pan). Brown the top and give it time to melt the cheese. Slice the quesadilla like a pizza pie and serve the wedges with chopped lettuce and tomato and sour cream and jalapenos. Guacamole is also excellent as a side condiment, as is pico de gallo (which I don't know how to make yet). The same mixture can be used as leftovers without having to cook up the quesadillas in a pan. I use the same flour tortillas and place a strip of chicken/veggie mixture, lettuce, cheese, tomato and sour cream, then wrap it like a burrito. Also, you can mix all that stuff up on a plate and crumble taco shells into it like a taco salad. That's awesome! --Jeffrey "With tha thoughts of a militant mind... Add thinly sliced steak, pour a little brandy over the top, light with a match and flambe. Add mushrooms, cook till soft, then add 500mls of fresh cream and a beef stock cube.
