RkyMtnHigh 0 #1 June 13, 2006 Mustard Greens? Turnip Greens? Collard Greens? If so, what's the difference in flavor between each? I just bought Turnip Greens and am boiling them in chicken broth, onion, and smoked pork chops...hope it turns out _________________________________________

My mom doesn't cook turnip greens with vinegar, yet after they are cooked, we put a jalapeno vinegar sauce on them before we eat themmmmmm.... _________________________________________
jumpinfarmer 0 #9 June 13, 2006 I know collards are bitter unless they freeze first something that won't happen in FL.

JohnMitchell 14 #22 June 13, 2006 I like most my greens raw in a salad or lightly steamed. I think boiling just takes out the nutrition and brings out the bitter. Plus I like most food al dente, not squooshy mooshy. Lemme know how them turnip greens turn out. I do know I like the greens better than the actual turnip. Now that's gross. RkyMtnHigh 0 #23 June 13, 2006 They are delicious...I think the smoked pork chops added lots of good flavor to the turnip greens. I didn't boil them to the point of mush...they had a nice consistency _________________________________________
headoverheels 292 #24 June 13, 2006 I cooked up some mustard greens this weekend, with a small amount of chicken stock, olive oil with roasted garlic, some onion, and a pasilla pepper. Yum. As someone mentioned, collards are only good after the first frost. Collards also are tougher in general, so take more cooking.
Royd 0 #25 June 13, 2006 They all taste green.Only kidding. I'm a nut for greens. I usually cut out the largest part of the stem. It cuts down on cooking time, and they're not quite as chewy. Mustards cook quickly and can be stir fried. Turnip greens are often cooked with the turnip chopped up in them. Collards are best boiled for at least an hour. All of them benifit , using bacon , fat back, or ham hocks as flavoring. It sounds like you are on the right track.
