NWFlyer 2 #26 May 8, 2008 I want to work at your office! This is my new favorite crock pot recipe. It adds so much flavor to the roast ... seriously yum. Pot Roast With Dried Cherries and Orange Juice * 2 large sweet onions, thinly sliced * 1 tablespoon olive oil * salt and pepper * 1 large pot roast, about 3 1/2 to 4 1/2 pounds * 3/4 cup chicken broth * 1/2 cup orange juice * Dash garlic powder * 1/2 teaspoon leaf thyme * 1/2 teaspoon salt * 1/4 teaspoon pepper * 1/4 cup ketchup * 5 to 6 ounces dried cherries Arrange onion slices in the bottom of the crockpot; drizzle with olive oil and sprinkle with a little salt and pepper. Toss to coat the onions. Trim visible fat from the pot roast and cut into 2 to 4 pieces, as desired. Lay the roast pieces on top of the onions. In a bowl, combine the remaining ingredients; pour over the roast. Cover and cook on high for 4 to 5 hours, or cook on low for 8 to 10 hours. Serve with the juices and onions."There is only one basic human right, the right to do as you damn well please. And with it comes the only basic human duty, the duty to take the consequences." -P.J. vskydiver 0 #27 May 8, 2008 This sounds really good! Thanks for sharing! I make a similar recipe called White Chicken chili. I usually soak northern white beans and garbanzo beans over night and then cook them up the next day on the stove and add chunks of cooked chicken breast, onion and lots of cumin and garlic and then I use a big can of Hominy rather than shoepeg. I'm going to have to try it in the crock pot next time. I bet it would work the same.

RkyMtnHigh 0 #29 May 8, 2008 Quote Vskydiver makes a great white chili, too. Do your other recipes use chicken meat? Her's does. I'd like to see all three to compare! Vskydiver's and Alanab's. Chaoskitty already put hers up. I've had Kitty's and it was GREAT! I might try to make her version and add diced green chilis just to kick it up a notchEdit: just saw V's recipe! Looks great too! _________________________________________
NWFlyer 2 #30 May 8, 2008 I'll add one more to the mix for fun ... this one I love because of the cheeeeeeese. Doesn't have to be done in the crock pot, though. Heat oil in large heavy pot to med/high. 2. Add onions & saute until translucent, about 10 minutes. 3. Add garlic, chiles, chicken, cumin, oregano, and hot pepper. 4. Saute 2 minutes. 5. Add beans and chicken broth. 6. Bring to a boil, reduce heat and simmer 2 hours or more. 7. Add 1 cup of grated cheese. 8. Stir until thick and melted. 9. Season with salt & pepper.
