Select the cells/columns you want to format and pick "Custom" then "hh:mm:ss".

The only caveat to this is that you will have to enter your times in that format (e.g. 00:01:10 for a minute, ten seconds of freefall). But, running a formula to add the times together is as easy as any other basic formula.

Another option is to enter the times as numbers with decimals (e.g. 1:10 would be 1.17, or 1:15 would be 1.25 or 0:55 would be 0.917, etc.). Personally, I'd go with the first option.
