I need a good recipe for Chili …….

Something different ……. Really hot, full of spice, oh and greasy and gooey….

Hook a jumper up with some ideas….please, please!

I'll give you full credit tomorrow night when the DZ straglers come over for dinner .... promise

Ground Beef ( 3 lb.) Browned
1 big can red kidney beans
1 big can brown beans
2 cans Tomato sause
Green peppers
Mushrooms
onions
Chilli powder ( add as much as you like)
Cayenne pepper ( red pepper) add carefully it's hot
black pepper
Tobasco
salt

Add all ingredients in large pot let simmer for a couple of hours
Enough time to have a few beers eh.

I don't really have a recipe, just make it, but here it what I do.

Get some beef (I will either cut up a steak or just use pre cut up beef if I'm in a hurry)
Brown the beef along with a chopped up onion and then put them in a crock pot or a pot on the stove
Add some canned chopped tomatoe and tomatoe sauce
Add a can of chopped green chiles (or you can use fresh and roast them and chop them)
Add chilie powder and cayenne pepper
If you want beans add either chilie beans or whatever kind of beans you want
Let cook for a few hours
I serve it with shredded chedddar cheese, chopped onion, sour cream and corn bread

OK...from the city where chili comes from....

4lbs coarse ground round or well trimmed chuck roast
1 large onion, coarsely chopped
2cloves fresh garlic, coarsely chopped
1 tsp.. or there abouts...of Mexican oregano( yes it's rather different)
1tsp ground comino
6 teaspoons of chili powder or to taste ( you can create the heat and flavor you want by using different dried chilis and grinding them yourself. Keep the seeds in for more heat.)
In a large heavy skillet or dutch oven, season the meat with salt and groundblack pepper, brown the meat with the onion then add the garlic. Add remaining ingredients with 2 cups of water.
Simmer for an hour or so.Thicken with masa mixed in a bit of water.
Add tomatoes if you must. Beans are sacrilege.

I like to top mine with queso fresco or asadero and maybe a little crema fresca.

I first made this chili for a Vegan AFF instructor. It is amazingly easy and good tasting (notice you only cook it for 15 minutes total!) Everyone who has tried it loves it. I made it with ground beef once, and it wasn't as good. I've taken it to a DZ chili cookoff, and it was very popular. Try this one with a another more time consuming meat version, and I'll bet many will prefer this.

Vegetarian Chili

1 Onion, chopped
2 cloves Garlic, minced
1 Green Pepper, chopped
1 can (28 ounces) Tomatoes, chopped
2 tablespoons Olive Oil
2 teaspoons Chili Powder
2 teaspoons Cumin
2 teaspoons Paprika
½ teaspoon Cayenne Pepper
2 cans Black Beans, undrained

Combine all the ingredients except the beans in a large pot, bring to a boil and simmer ten minutes. Stir in the beans and cook five minutes more.
