Well, just take a whole chicken, stick an opened can of beer up its ass, sit it on a charcoal grill at about 225 degrees for three hours with the lid closed and presto, beer chicken. You can buy a rack for this purpose at Walmart but mind how you remove it from the grill because what beer remains will be boiling hot after three hours.

Feel free to use a poultry rub if desired but if you throw some hickory or mesquite chips on the charcoal you shouldn't need the rub. Don't lift the lid during the smoking process.
