Two things tonight...

First I made Shrimp Fritters...which are made in my food processor with lemon juice, olive oil, jalapenos, scallions, ginger, shallots, scallions...mmmm...and pan seared....to DIE for with mache underneath!

Next for the week of lunches before we head out to Lake Wales..is Mini ground Turkey Meatloaves..ground turkey, chopped fresh cilantro, toasted sesame seed oil, grated ginger, one egg white, low sodium teriyaki sauce, nonstick cooking spray...yum! yum!

Way low cal meals under 100 cals..with low sodium, low fat, low carbs and big on protein...yum! yum! without sacrificing flavorB|

mmmm...no I didn't...they are to DIE FOR;)

Hmmm...the ginger was met with mixed reviews...so I guess I'll elimate that next time;)

The fritters were fabulous. The ginger discussion came up because there were big hunks of it... it was overpowering when you bite into one. The recipe called for grated ginger, which would've worked well I think. So next time we'll try it grated maybe.

Somebody else told her to make ME cook last night. We ended up both cooking and I remembered why I eat fast food so much when single =p

Ginger is delicious. It needs to be in the recipe. (Grated could make an important difference, though.) Isn't it supposed to be an aphrodisiac, too?

And I know how to boil water too, so watch out! Maybe I could teach Emeril a thing or two about steamed veggies =p
