Some tribes like to add Spices and Potatoes and Carrots.

This is a RAW Vegan recipe:

use a mandoline to slice thin one anise root
mix with orange and pink grapefruit slices
cover with raw walnut oil and garnish with mint leaves.

for desert
open one ripe young thai coconut
take the coconut milk and meat and place in a blender with raw cacao nibs. add a touch of vanilla. blend. delicious chocolate pudding

and another:
soak brazil nuts in water overnight.
rinse, then slice the nuts and toss in agave syrup and salt. dehydrate in a dehydrator overnight.

create sauce: take one super ripe mango and a little bit of red chile with a ground star anise. blend. put in squeeze bottle

julienne a ripe and a non-ripe mango.


put it together:
on a plate, place the brazil nuts, top with julienned mangoes, drizzle with sauce and top with basil and sprinkle with ground star anise. delicious (and the anise does not taste like black licorice)

My roommie is vegetarian so I cook a lot of different stuff. Tofu is easy to cook in the skillet.. and its going to soak up the flavor of whatever you cook it in. Soy sauce is awesome in tofu (imagine that!). You can substitute tofu for just about anything you'd cook with chicken or ground beef. And its awesome in thai recipies. Spicy peanut noodles.. pad thai.

Black Beans and pinto beans are a good meat substitue. Try heating up some black beans and serve them in a bowl with a little feta cheese on top, with corn muffins or cornbread pancakes. Thats some southern cookin..

Veggie lasagne is easy. Use lots of squash, zuchinni, spinach, carrots, asparagus.. whatever you like. Layer it up just like a regular lasagne without the meat.

Does he eat fish? Its a bit more expensive than meat but its soooo good. Last night we had lemon pepper orange roughy (bought a bag of frozen orange roughy at costco), steamed asparagus, and au gratin potatoes.

Other easy fish options are salmon, tuna, mahi, grouper.. swordfish..mmmm..

Dont forget easy stuff like sandwich wraps and burritos. Rice and beans and veggies. Tofu in either as well.

If you dont know how to cook any of that stuff.. go online to any recipie site and just look something up with that ingredient and it will tell you how long and what temperature to cook it. I like www.foodtv.com and www.epicurious.com.

Pasta Raphael (from the New Basics cookbook)

* 2 (6 oz.) jars marinated artichoke hearts in oil
* 1/4 cup olive oil
* 2 cups chopped onions
* 2 tbsp minced garlic
* 1/2 tsp. dried oregano
* 1/2 tsp. dried basil
* 1 tbsp coarsely ground black pepper
* 1/2 tsp. salt
* pinch of red pepper flakes
* 1 (28 oz.) can plum tomatoes, with their juice
* 1/4 cup chopped Italian flat leaf parsley

1. Drain the artichoke hearts reserving the marinade (you can leave the artichoke hearts whole or chop them if you prefer).

2. Heat the olive oil in a large saucepan.
Add the onions, garlic, spices, and reserved marinade.
Saute over medium-low heat until onions and garlic are soft and translucent, about 10 min.

3. Add the tomatoes and simmer for 30 min.

4. Add the artichoke hearts and parsley.
Stir gently, and simmer for another 5 min.

6 portions, enough for 1 pound pasta

Fresh Dilled Carrots

1 package of raw carrots (chopped into bite sized pieces and steamed

½ package of fresh dill (washed and chopped very fine, including the stems

Mix the carrots with some butter and fresh dill. If you wish, you can premake and then heat up later in the microwave.

Heavenly Onions

2 tablespoons Butter
2 large White Onions, cut in rings and halved
½ pound Fresh Mushrooms, sliced
½ pound Swiss Cheese, shredded
10 slices French Bread, butter both sides
1 (10 ¾ oz.) can Cream of Mushroom Soup
½ cup Milk
2 teaspoons Soy Sauce
Salt and Pepper to taste

Saute onions in two tablespoons butter.
Spray Pam in a 9 x 13” baking dish
Layer mushrooms, onions, cheese and bread in pan
Mix soup, milk, soy sauce
Pour over top of bread
Sprinkle lightly with salt and pepper
Cover and refrigerate overnight
Bake uncovered at 350 degrees for 45 minutes

Oriental Cole Slaw

6 Green Onions, sliced
1 head Cabbage (chopped fine) or 2 large bags Cole Slaw Mix
2 packages Top Ramen Noodles (crushed fine) – omit seasoning mix
½ cup Slivered Almonds (brown under the broiler or a minute or two)
½ cup Sesame Seeds (brown with almonds)

Dressing:

4 tablespoons Sugar
2 teaspoons Salt
¾ cup Canola Oil
1 teaspoon Ground Pepper
6 tablespoons Rice Vinegar (green label)

Mix dressing and add to other ingredients just before serving. You can easily cut this recipe in half and also you can mix the dressing earlier in the day and refrigerate until ready to use.

Green Bean Stir-Fry

1 tablespoon Soy Sauce
2 Garlic Cloves, minced
1 teaspoon Sesame Seeds, toasted
1 teaspoon Brown Sugar
1 teaspoon Peanut Butter
¾ pound fresh Green Beans, trimmed
4-½ teaspoons Olive Oil

In a bowl, combine the soy sauce, garlic, sesame seeds, brown sugar and peanut butter, set aside. In a large skillet, stir-fry the green beans in oil until crisp-tender. Remove from the heat. Add the sauce mixture, stir to coat. Yield: 2 servings

Also . . . you can go to an Oriental Grocery and pick up some seaweed papaer . . . like you would roll sushi in and make little burritos out of anything in Kittys menus.
