Post your Favourite Sweet Potato recipe

This one may be similar to what you have.

SWEET POTATO GRATIN

3 pounds sweet potatoes
½ cup butter, divided
¼ cup Sucanat, divided
2 eggs
2/3 cup orange juice
2 teaspoons ground cinnamon, divided
½ teaspoon Celtic sea salt
¼ teaspoon ground nutmeg
1/3 cup all purpose flour
¼ cup uncooked old-fashioned oats
1/3 cup chopped pecans

Bake sweet potatoes in a 350° oven for one hour or until tender
Let rest 10 minutes
Cut in half lengthwise and scrape pulp into a large mixing bowl
Mix together ¼ cup butter and 2 Tablespoons Sucanat then mix into potato pulp until butter is melted
Beat in eggs, orange juice, 1½ teaspoons cinnamon, salt and nutmeg.
Beat until smooth, pour into 1 1/2 quart baking dish, smooth top

For topping, combine flour, oats, ¼ cup sugar and ½ teaspoon cinnamon in medium bowl
Cut in ¼ cup butter until coarse crumb stage, mix in pecans
Sprinkle evenly over sweet potatoes.
Bake at 350° for 25-30 minutes
Makes 6-8 servings

i LOVE them with butter and brown sugar - though i dont mash mine up - but anyway you eat them sweet potatoes are awesome

Sweet Potato Puffs

2 cans (40 oz. each) sweet potatoes or yams, drained
3 egg yolks
1 1/2 tsp. salt
1/2 cup butter, melted
1/3 cup firmly packed brown sugar
2 cups cornflake crumbs
1/2 cup butter, melted
26 to 34 regular-size marshmallows

Mash sweet potatoes and combine with egg yolks, salt, 1/2 cup butter and the brown sugar. Combine cornflake crumbs and 1/2 cup melted butter and put into shallow dish or onto waxed paper.
Line muffin pan with paper baking cups.
Mold sweet potato mixture around each marshmallow. Roll in cornflake mixture and place into baking cups. Poke finger into top of each puff. Freeze.
When ready to bake, preheat oven to 350. Bake unthawed puffs for 30 minutes.

My mother-in-law fed me this one. It sounds weird, but actually is quite good!

Bake the sweet potato (usually for one hour at 350). Place butter and dill relish on it and eat it like a baked potato. I didn't think the relish would be good, but it complements the flavor quite well. (make sure it's dill and NOT sweet relish) Now it's one of my favs!

I've been making a Tyler Florence recipe for the past two years, but only for Thanksgiving. The sweet potatoes are roasted, along with a few bananas. Then they are all mashed up together with lots of butter and honey and topped with a buttery pecan crumble and baked.

Its yummy. When I was a kid, we only had canned sweet potates topped with some sugary marshmellow stuff- NASTY! I didn't even realize I like sweet potates until I tried real ones.

Sweet Potatoes with Warm Black Bean Salad

4 medium sweet potatoes
15 oz can black beans
2 medium tomatoes - diced
1 tbsp extra virgin olive oil
1 tspn ground cumin
1 tspon ground coriander
3/4 tspn salt
1/4 cup fat free sour cream
1/4 cup chopped cilantro


1. Nuke sweet potatoes 12-15 minutes (until fork tender).
2. Combine next 6 ingredients in a bowl. Nuke 2-3 minutes.
3. Split open sweet potatoes and put filling inside. Top with sour cream and cilantro.


It's yummy.. and when served up with a salad makes a nice, light meal.

Have you tried to add a nice ripe banana and a dash of cinnamon? Heavenly!

My hubby and I also like to simply roast them with some olive oil, S/P, cinnamon, and nutmeg.

I've never heard of putting a banana in with mashed sweet potatoes. And to be honest, it doesn't sound very appealing to me. But maybe it's one of those things where it tastes better than it sounds?

Roasting with olive oil sounds good though.

Mashed banana-sweet potato is one of the side dishes at Naked Fish along with coconut rice and other exotic side dishes. If it wasn't for them I would never have tried it either. Somehow, it just works.
